    I like how the video also shows the pan with water. Most recipes omit this, but putting a pan of water in the oven prevents the cheese cake or filling pie (like pumpkin) from drying too much and cracking. You can add extra liquid ingredients (like melted chocolate chips or maple syrup) depending on what you want to do with your cheese cake or pie, but that only lessens the cracks, doesn't get rid of them completely.
